Are you a butcher shop?

Not exactly. Yes, we cut and supply meat, but we are what’s known as an end processor. We don’t raise or harvest the animals used in our products. Instead, we are supplied whole muscle products by local meat distributors.

are you certified?

We’re the top of the tops when it comes to meat certification, safety, and cleanliness: we are proud to be a USDA certified facility. We are held to the highest standards of safety, sanitation, and quality control by the US Department of Agriculture and are inspected daily. We engage in continuing education and training, and are guided by all federal, state, and local rules and regulations for food safety. We only use USDA-harvested and -certified meats in our finished products, and are served by reputable, high quality local meat distributors.

what’s in your sausage?

Each and every sausage we create is made from whole muscle pork or beef, along with spices and seasonings. Get our ingredient list here (coming soon!).

do you do custom batches?

You bet! If you have harvested animals you would like processed into sausage, want to create a large batch of a favorite family recipe, or need a large batch processed in a commercial space, we can help. We’d love to discuss more - please email or call Ed today.
